I normally have my WDTV Live connected to my TV over HDMI, I took the WD unit over to my brother in-laws place to
play some videos but had to connect over component video. The menu comes up but appears like it's jumping endlessly.
I can browse the menu but is insanely hard to navigate when it's jumping as quickly as it is. I'm pretty sure I know what
setting I need to get to but I can't read any of the text well enough to select it. I need to get to the setting to switch from
HDMI output to composite output. Can anyone give me directions on how to do this without having to look at the screen?

Any help would be greatly appreciated.

You do a reset to default settings first?

you could try pressing the reset button on the side for 10 seconds, apparently that switched it from PAL to NTSC (or back), that could be your issue, mine works fine in either mode on my LCD via HDMI but not so well through composite.
    worth a try..
