I don't think the Mini can decode 720p MKVs, but I guess 720p MP4s should be fine (read manual for exact compatibility list). So search for software that can convert accordingly. Maybe SUPER can do what you want. If you don't have the proper codecs installed, use the CCCP codec pack.
